OUR TEAM

Executive Chef, Larry Mannheimer


A Massachusetts native, Larry graduated from Lagrange High School and studied Culinary Arts at Sowela Technical Community College. His history with 121 Artisan Bistro takes him back to 2008, when he worked up to Restaurant Manager by 2012. His next move was to Otis and Henry’s in Isle of Capri Casino before moving on to The Market Place, then Pitt Grill, serving as Assistant Manager. By 2014 he began his tenure at Vic and Anthony’s in Golden Nugget Casino, progressing to Executive Chef before coming full circle to return to 121 Artisan Bistro, assuming the Executive Chef position. Larry is a multi-talented chef with an all-around skill set and poise under pressure. He is a true leader committed to excellence.

Executive Sous Chef, Benny Gray


Born in Jennings, Louisiana, in 1977, Chef Benny Gray began his culinary career at 19 with Ensco Offshore, starting as a galley hand in 1996. His dedication and talent quickly led to a promotion to night cook within six months. Under the mentorship of the head chef and the experience of working with various skilled professionals, he became a sous chef by 1998. Ensco recognized his potential and sent him to numerous culinary schools, where he honed his skills in fruit carving, cake decorating, ice sculpting, and more. In 2008, Chef Benny joined Aramark Offshore as a head chef for a year before returning to Ensco in 2009, continuing his role as head chef until 2016. Transitioning to the casino industry, he worked under renowned pastry chef Joseph Agustin, specializing in pastry and chocolate work, while also serving as a sauté cook at Grotto Restaurant and 121 Bistro. In 2023, he became the kitchen manager for The Max and The Brickhouse restaurants, showcasing his leadership skills. By the end of 2023, he returned to 121 Bistro as the Executive Sous Chef, working under Executive Chef Larry Mannheimer. Chef Benny’s journey reflects a steadfast commitment to culinary excellence and continuous growth in his craft.​

Kelseigh Ramirez, Front of House Manager


Kelseigh is a dedicated and driven Restaurant Manager. A graduate of Sulphur High School in 2019, Kelseigh earned a Bachelor's degree in Accounting from McNeese in 2022. With a strong foundation in hospitality and financial acumen, Kelseigh took over FOH management in February of 2023, bringing a unique perspective to guest experiences. With 5+ years of service experience, including 3 years at 121 restaurants, Kelseigh brings a wealth of expertise and knowledge to her role. As FOH Manager, she has honed her skills in managing all aspects of the front-of-house operations, from staff training to ensuring seamless service flow, Kelseigh’s expertise and attention to detail are evident in every aspect of her work. With a passion for creating a warm and welcoming atmosphere, Kelseigh goes above and beyond to deliver exceptional dining experiences for every guest. She understands the importance of customer satisfaction and strives to exceed expectations at every turn. By leading her team with professionalism and providing guidance, Kelseigh ensures that 121 Artisan Bistro remains a go-to destination for unparalleled hospitality.
